Low Carb Double Chocolate Chip Cookies

Ingredients

Ingredients:

  • 1 cup almond butter
  • 1/3 cup Stevia baking blend
  • 2 Tablespoons unsweetened cocoa powder
  • 1/4 tsp salt
  • 2 eggs
  • 1 Tbsp Coconut Oil
  • 2 Tbsp water
  • 2 teaspoons vanilla extract
  • 1 Tsp baking soda
  • 1/2 cup sugar free chocolate chips

Instructions

  1. Preheat your oven to 350 degrees F and get a flat sheet pan ready for baking by placing a silicone mat on top. (Foil or parchment paper will also suffice)

  2. In a large bowl, add the almond butter, stevia, cocoa powder, eggs, coconut oil, water, vanilla and baking soda and mix with a spatula until a smooth paste forms and the cookie dough begins to pull away from the sides of the bowl.

  3. Add the sugar free chocolate chips to the bowl and mix again to incorporate the chocolate chips.

  4. Use an ice cream scoop or two spoons to scoop cookie dough balls that are about two inches thick. Place the scooped cookie dough on the prepared sheet pan leaving about 1 1/2 inches of space between each cookie. 

  5. Bake the cookies in the preheated oven for 10 minutes Remove from the oven and let cool on the tray before moving to a plate (or directly into your mouth).
